Recipe: Quinoa with Apples & Onions PDF Print E-mail

Modified from a recipe submitted by Lee Stookey for the Brattleboro Food Co-op Cookbook)

1 cup quinoa
2 cups water
2-4 Tbsp. olive oil or butter or a mixture
1-2 cups onions, chopped finely
1 Golden Delicious or Mutsu apple, cored and chopped (can be peeled if desired)
½ tsp. dried thyme
Salt and pepper to taste
Fresh parsley, chopped for garnish

Toast the quinoa in a large ungreased skillet, stirring over medium heat until it has darkened slightly—just a few minutes. Cool. Rinse the quinoa after this step to remove any saponins, which have a bitter taste. Boil 
water, add the toasted rinsed quinoa, and simmer 
covered until the water is absorbed, about 15 minutes.
Heat the oil or butter in a skillet, add the chopped onions and apples, and cook over medium heat until golden brown and soft. Add the cooked quinoa and thyme, and salt and pepper to taste. After it is heated through, garnish with chopped parsley.  Serves 4-6
