Co-op Recipe: Refrigerator Pickles PDF Print E-mail

1 gallon sliced, washed, unpeeled cucumbersand place in hot sterilized jars and cover with
following solution which should be all combined and brought to a boil:

4 cups apple cider vinegar
4 cups sugar or 2 cups honey
ΒΌ cup pickling salt
1 tsp. turmeric
1 tsp. celery seed
1 tsp. ground mustard

Place cucumbers in hot sterilized jars and cover with a solution of the other ingredients combined and brought to a boil.  To prevent jars from possible cracking from the heat of the solution, put a clean metal spoon or knife in the jar. Wipe down the jar and cover, label, and date. Additional sliced cucumbers can be added while the brine is fresh once the cucumbers settle into the solution. Refrigerate the pickles once the jars have cooled. They can be stored for 6 months in the refrigerator.
