Co-op Recipe: Tomato Soup PDF Print E-mail

This is a recipe I got from my grandmother years ago and it is tasty hot or cold!

1 quart tomatoes, washed and quartered
1 pint water
4 whole cloves
A small onion, sliced
2-3 springs fresh parsley, washed
8-10 basil leaves, washed
½ to 1 tsp. salt
2 tsp. sugar or 1 tsp. honey

Put everything together in a pot and cook for about 20-25 minutes on medium heat. Cool slightly before putting it into a food mill or an old fashioned food press with a wooden paddle so all the juice comes out and the pulp, herbs, and onions stay behind. Cool and pour into sterilized canning jars, leaving half an½ inch of headroom at the top for expansion when the soup freezes. If you plan to can it, pour hot into sterilized canning jars and follow instructions for
canning tomatoes in a boiling water bath. Enjoy!
