Recipe: Amaranth Hot Cereal Porridge PDF Print E-mail

Ingredients

  • 1 cup of amaranth
  • 3 to 4 cups of water
  • 1/4 - 1/2 tsp. salt
  • 1/4 cup chopped nuts of your choice (almonds, walnuts, pecans etc.)
  • Cinnamon

Directions

  1. Put the amaranth in a 2- or 3-quart stainless steel or other heavy-duty sauce pan and add a little salt if desired.
  2. Cook for about 20 to 30 minutes, stirring occasionally, and add more water if needed.
  3. Serve warm with chopped nuts and cinnamon, and a dollop of yogurt, if you like.
  4. Any extra amaranth can be refrigerated and used within a few days for more hearty breakfast meals.

Serves 2-4.
