  1. Purchase a Hardwick Beef sirloin steak (1/2 pound or so per person) and marinate over night.    
  2. For max flavor let marinade for 18 hours.
  3. Remove steak from fridge and bring to room temperature.
  4. This allows the steak not stick to grill.
  5. Turn on grill and set to medium/high heat until the temperature reaches 400°.
  6. Sear the steak 3 minutes per side at 400°.
  7. For medium, add more time per side to your liking.
  8. Internal temperature for medium-rare should reach 125°; for medium – 140°; well-done – 150+°.
  9. Remove from grill and enjoy with a Spelt Berry Salad.

 

Marinade: Mix together ½ cup olive oil, a splash of red wine, 1 tsp. parsley, 1 tsp. oregano, 1 tsp. thyme, and ½ teaspoon salt and pepper.
