Grain of the Month: Masa Harina PDF Print E-mail

Masa is the Spanish word for dough and masa harina literally translates to “dough flour.” It could easily be considered the primary food in Mexican and Central American cuisine since it is used in preparing the dough for tortillas and tamales—part of the daily diet of Mexicans and Central Americans, and some South Americans too.

It’s planning season at the Co-op, which means that we take stock of what has been happening in our industry, in our regional co-ops, and in our own store in order to make some plans for what’s next. Typically, managers gather in a long planning retreat-type meeting and review some of the data that we have compiled, and discuss how that information may impact some of the individual department plans that we have in mind, as well as whole-store ideas. At each department meeting, these ideas are discussed and modified, tweaked and made more precise, in preparation for the budget that we put together in what we call the Annual Business Plan.

Do we, as a co-op, feel that people, the people in this community and in surrounding communities, have reasonable access to participation in the Co-op? Probably. The doors are open fourteen hours a day, six days a week (and 12 hours on Sunday). There are staff members available to answer questions. If you can get in the door, you can participate.

As I talked with Bronwyn, David, Sue, and Dante from Bulk about why it is great for the planet and your family, they shared a few reasons. First, you can obtain any quantity of food that you need, cutting down on food waste and allowing you to save money.

Producer of the Month: Boston Post Dairy PDF Print E-mail

One of the many delights that comes with taking our monthly trip to interview the Producer of the Month is traveling with a member of the Co-op department we are highlighting. I was lucky enough to travel with John, your cheese department manager, to Enosburg Falls, Vermont to interview members of the Gervais (Jar-ves) family that owns Boston Post Dairy. We passed the time on our drive with conversations about cheese (of course); John shared stories about the past Co-op cheese manager, Henry, and filled me in on the local Brattleboro music scene. John also talked about his love for Boston Post Dairy and how four sisters and their parents own the farm, store and cheese making operation. We were both very excited to learn first hand how their cheeses are made, peruse their farm store and meet the goats.
